Attila Pálffy is a seventh generation winemaker in the northern Hungarian village of Köveskál. P.A.N.K. (Pálffy Attila Natural Köveskál) started as Pálffy's natural wine side project, an homage to his love of punk music and culture, and quickly became his full-time job. The P.A.N.K. project is managed by Attila and his fiancée Orsolya, and their collection consists of small-batch natural wines made in experimental styles. The family's organic vineyards are on Pannonian limestone, volcanic basalt rock and red sandstone. The winery is certified organic.
The Classikaal is a new white pét-nat from 2024, made from 55-year-old vine Olaszrizling (50%) and Tramini (50%). After grape stamping, whole clusters were crushed with a traditional basket press, and the must settled for one night. Spontaneous fermentation with native yeasts in a Speidel tank. The wine is mineral and terroir-driven, with flavors like pear, almond and marzipan.
Unfined, unfiltered and not disgorged. Zero sulfur added. Certified organic.
